Feed a family of 4 for £9.99 with Parmesan Spring Chicken

What you’ll need:
• 1 egg white
• 5 tbsp. finely grated parmesan cheese
• 4 boneless, skinless chicken breasts
• 400g new potatoes
• 140g frozen peas
• 1 bag of baby spinach leaves
• 1 tbsp. white wine vinegar
• tsp olive oil
1. Line a grill pan with foil and heat the grill to a medium temperature
2. In a medium sized bowl beat the egg white with a little salt and pepper
3. Grate parmesan onto a plate
4. Dip the individual chicken breasts into the egg white and then into the parmesan cheese, making sure all 4 are fully coated
5. Lay the coated chicken breasts onto the grill pan and pop under the grill for 10-12 minutes or until browned and crisp. Make sure you grill both sides of the chicken
6. Meanwhile, boil the new potatoes for 10 mins, adding the peas for the final 3 mins, then drain
7. In a large bowl, toss the potatoes, peas and spinach leaves in white wine vinegar and olive oil. Season to taste
8. Divide your salad between 4 plates and serve with the parmesan coated chicken on top
